Baked Acorn Squash

With Fall just around the corner, here’s a great idea for a side veggie to accompany that hearty entree.

Baked Acorn Squash

  • Servings: 4
  • Difficulty: easy

Ingredients

  • 2 acorn squash
  • 4 pats of butter
  • 4 teaspoons brown sugar
  • 2 squares of aluminum foil
  • PAM (or similar) cooking spray

Preparation

  • Pre-heat oven to 350 degrees.

  • Apply cooking spray to one side of both pieces of foil. Wrap each squash in a foil square – oiled side on the inside touching the squash.

  • Bake the squash for 1 hour until soft to the touch (like a baked potato).

  • Remove squash from oven, unwrap foil, and cut each into halves.

  • Scoop seeds from center of each half using a spoon. Put one pat of butter and one teaspoon of brown sugar into each hollowed-out cavity.

  • Put squash halves onto a cookie sheet and insert back into oven, cooking for an additional 20 minutes.

  • Remove from oven and serve immediately.

  1. I have baked Acorn Squash many times using the same ingredients but not the method as yours. I baked 3 acorns, using your instructions and received
    many compliments. I am going to serve them for Thanksgiving dinner.
