Stevarino’s Carribean Spice Rub

Sometimes, a cooking event calls for a special ingredient. That’s when you call on my very own blend of herbs and spices. With ingredients common to the West Indies, it’s a delicious and versatile complement to seafood, chicken, pork or beef.

Stevarino's Carribean Spice Rub

Ingredients

  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon dried thyme flakes
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cinnamon
  • 1 tablespoon allspice
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • ¾ teaspoon lemon pepper
  • ¾ teaspoon fine sea salt
  • ¼ cup extra virgin olive oil

Preparation

Dry Rub
  1. Combine paprika, chili powder, cayenne pepper, garlic powder, onion powder, thyme, nutmeg, cinnamon, allspice, cumin, lemon pepper and salt in a paper bag or Tupperware container. Shake the bag or container until ingredients are thoroughly blended together.

Marinade
  1. Put blended dry rub mixture into a medium-size mixing bowl and whisk in the olive oil until evenly blended.
